    Banana Pancakes

    I make these for my son every morning. I always think I have made enough for both of us, but he winds up eating them all. They are better than ANY boxed pancake mix I have ever had.

    Ingredients:

    2 ripe bananas (mashed)
    4 large eggs
    ¼ teaspoon cinnamon
    ¼ teaspoon alcohol free vanilla
    1 tablespoon peanut butter or almond butter (optional)
    ½ teaspoon baking soda
    Handful of fresh berries

    Turn the stove on medium high and add coconut oil to the pan and spread around until surface is evenly covered. Mash together the egg and banana in a medium sized bowl. Add in all other ingredients. Pour batter into the pan to form mini pancakes and let it stand for 3 to 5 minutes or until firm enough to flip. You will need to watch them so they do not burn. When they are done, put on plate and pour on the honey, and top with warm yummy strawberries.
