Use your slow cooker or use a casserole in the oven
Ingredients:
3 lbs stew beef
juice of two lemons
2 chopped carrots
1 butternut squash(chopped)
3 stalks of celery
2 cup beef stock (homemade, not store-bought)
2 onions chopped
1 1/2 tsp ground cumin
2 cloves minced garlic
2 tsp oregano
1 T vinegar
1 T honey
Marinate beef in lemon juice. Place all ingredients in an oven proof casserole dish (or slow cooker) and bake at 250 F for about 12 hours. (You can do this overnight and then let it sit for the day.
