    Harvest Apple Delight

    Serves 1, but it can be easily be doubled or tripled

    Here is a quick lunch or dinner when you are in a hurry. It's also good to make in the morning and take along for lunch, stirring in a drizzle of lemon or lime juice to keep the apples from turning brown.

    Ingredients:

    1 apple, cored
    1 pear (optional), cored
    1 sprinkle pecans (handful), soaked then dehydrated, or unsoaked
    1 celery stalk, cleaned & cut into small chunks
    1 dash cinnamon, or to taste

    I have used different varieties of apple (Fugi and Gala are our favorites.

    Clean the apple (and pear, if using). If you prefer, you can leave on the skins. Add all the ingredients into the blender and process. The pear makes the mixture wetter and not as crunchy, but a good ripe pear tastes wonderful with the other ingredients. If the apple is small, use two.

    Blend and mix raisins (optional) The raisins make the blend sweeter. Alex prefers this prefers this with just apple, cinnamon, and a drizzle of honey. The celery and nuts (would be just as good with almonds, walnuts, etc.) give it an Autumn harvest feeling.
