    Meatballs and Tomato Sauce

    Since I come from an Italian family, I have always made my Grandmas meatballs & sauce. We have had to change the recipe a bit to become part of the Specific Carbohydrate Diet. My family loves my new version of SCD meatballs & tomato sauce. So, I want to share it with you.

    Ingredients:

    Meatballs:
    1 cup of Almond flour
    2-3 garlic cloves - minced
    1 lb of ground beef (grass fed and organic if possible)
    1 beaten egg
    Parsley
    Basil (fresh)
    Cilantro (fresh)
    Sea salt
    Black pepper
    oregano

    Mix everything with your hands and form meatballs. Put in a glass casserole dish and cover. Bake for 1 hr or until done. When meatballs are cooked add to the tomato sauce (below).

    Tomato Sauce:
    1/4 cup olive oil
    6 tomatoes, chopped
    1/2 onion, minced
    Handful of basil, minced
    4 cloves garlic, minced
    Sea Salt and pepper to taste

    First, cut up the tomatoes and put in a big bowl….then the fun part comes…..get your kids involved and really SQUISH the tomatoes. In a large saucepan, heat oil and garlic over medium heat; add chopped and squished tomatoes, onions, and salt and pepper to taste.

    Mix ingredients well; cover and simmer for 30 minutes. Serve. We serve this over spaghetti squash or butter nut squash.
