| I want to thank Trina Bigham from MA for teaching me how to make her incredible soup. Not only is this the BEST soup I have ever tasted, but it is an AWARD WINNING soup. It won 1st prize in the "Taste of Home" contest. I make this every week for my family. Ingredients: 1 whole butternut squash (remove seeds and peel) 1 whole buttercup squash (remove seeds, and core out) 2 large onions sliced medium 6 organic carrots, peeled, and chopped 1 whole chicken Boil chicken for approx 1 ½ to 2 hrs.
Take chicken out of stock and set aside to cool. While waiting for chicken to cool, add veggies to stock and boil for 1 hour or until soft. Use a potato masher and mash veggies (while they are in the broth). Debone chicken and break up chicken meat into small pieces. Add chicken to the soup. Then add sea salt and pepper to taste. Enjoy! |
